Bought this pork belly with vague plans… ended up creating a porchetta so divine it briefly shifted the Earth’s rotation.
The cut was perfect — juicy, fatty, rolled like a dream — clearly from a pig that lived well and had strong opinions about olive oil.
Stuffed it with garlic, fennel, rosemary, and unearned confidence, then roasted it until the skin hit crackling perfection and the kitchen smelt like a Tuscan holiday I’ve never been on.
It’s honestly devastating that I can’t attach a photo to this review — the pictures would’ve done the talking. Golden, crisp, glistening glory. But you’ll just have to imagine it. Or better yet, buy it and make your own.
One guest asked if I catered weddings. Another tried to take leftovers home in their pocket. Enough said.
